Moo Shu Pork

  1. Combine pork with marinade ingredients (water, oyster sauce, cornstarch, oil) and set aside for 15 minutes.
  2. Mix the table sauce (hoisin, hot water, soy sauce, sesame oil). Microwave 20 seconds and set aside.
  3. Combine filling seasoning ingredients in a small bowl.
  4. Heat wok until just smoking. Add 2 tbsp oil. Pour in beaten eggs, scramble quickly, break into pieces, and remove to a plate.
  5. Add 1 tbsp oil to wok. Sear pork until ~80% done, then remove.
  6. Add remaining 1 tbsp oil on medium-high. Stir-fry garlic, cabbage, carrots, and mushrooms for 1 minute. Add Shaoxing wine and stir-fry 30 more seconds.
  7. Add filling seasoning and cooked pork. Stir-fry 1–2 minutes. Add egg and scallions, stir 30 seconds until vegetables are wilted and most liquid has cooked off. (If too saucy, add a small cornstarch slurry to thicken.)
  8. Serve immediately with moo shu pancakes and table hoisin sauce.
