Instructions
- Drain tofu blocks. Gently squeeze to release water or pat dry. Cut into 1-inch cubes.
- In a shallow bowl, combine cornstarch, sesame seeds, salt, white pepper, garlic powder, and onion powder. Working in 2 batches, dredge tofu cubes in the mixture, pressing to cover all sides.
- Heat a large nonstick pan or cast-iron skillet over medium-high. Add neutral oil. When shimmering, fry first batch of tofu 4–5 minutes per side, flipping to crisp all sides, until golden. Transfer to a plate. Repeat with second batch. Remove all tofu.
- In the same skillet, add minced garlic and cook 1 minute. Add water/stock, sugar, oyster sauce, soy sauce, honey, Shaoxing wine, rice vinegar, sesame oil, and white pepper. Simmer 3 minutes.
- Stir cornstarch slurry and add to sauce. Cook 1 more minute until thickened. Return tofu and toss to coat.
- Serve over rice, garnished with toasted sesame seeds and scallion.
